Ingredients

  • 2 1/2 c. sifted flour
  • 1/2 tsp. salt
  • 5 tsp. baking powder
  • 1 well beaten egg
  • 1 c. sugar
  • 3 Tbsp. melted shortening
  • 1 c. nuts
  • 1 c. raisins
  • 1 Tbsp. flour
  • 1 c. milk

Directions

    Heat skillet until almost smoking.

    Turn burner down to low. Mix 1 to 1 1/2 cups corn meal mix, milk and egg.

    May also add chopped onion and/or sour cream.

    Add water if needed to make batter thin like cake batter.

    Pour into hot skillet and place lid on.

    Then turn batter and let cook.

    Crack lid to let the steam out so cornbread will not be soggy.

    One bag of self-rising corn meal is used.
