- 2 1/2 c. sifted flour
- 1/2 tsp. salt
- 5 tsp. baking powder
- 1 well beaten egg
- 1 c. sugar
- 3 Tbsp. melted shortening
- 1 c. nuts
- 1 c. raisins
- 1 Tbsp. flour
- 1 c. milk
Directions

1Heat skillet until almost smoking.

2Turn burner down to low. Mix 1 to 1 1/2 cups corn meal mix, milk and egg.

3May also add chopped onion and/or sour cream.

4Add water if needed to make batter thin like cake batter.

5Pour into hot skillet and place lid on.

6Then turn batter and let cook.

7Crack lid to let the steam out so cornbread will not be soggy.

8One bag of self-rising corn meal is used.
