Nutty Baked Squash

Ingredients

  • 2 acorn squash (1 lb. each)
  • 3/4 c. cracker crumbs
  • 1/3 c. coarsely chopped pecans or walnuts
  • 1/3 c. butter or oleo, melted
  • 3 Tbsp. brown sugar
  • 1/2 Tbsp. salt
  • 1/4 tsp. nutmeg

Directions

    Cut squash in half and spoon out seeds.

    Mix all ingredients and spoon 1/4 of mixture into each half.

    Place squash in ungreased baking dish (13 1/2 x 9 x 2-inch).

    Season cut sides with salt and butter.

    Pour water into dish 1/4 inch deep.

    Cover with foil and bake in 400° oven for 30 minutes or until tender.
