Nutty Caramel Corn

Ingredients

  • 7 c. popped corn
  • 1 c. roasted peanuts
  • 1 c. pecans
  • 3/4 c. packed brown sugar
  • 6 Tbsp. butter or margarine
  • 3 Tbsp. light corn syrup
  • 1/4 tsp. salt
  • 1 tsp. cinnamon (optional)
  • 1/4 tsp. baking soda
  • 1/4 tsp. vanilla

Directions

    Remove all unpopped kernels from popped corn. Combine popcorn and nuts in a 13 x 9 x 2-inch baking pan.

    In a 1 1/2 quart saucepan combine sugar, butter or margarine, corn syrup and salt. Stir in cinnamon if desired.

    Cook and stir over medium heat till butter melts and mixture comes to a boil.

    Reduce heat and cook without stirring for 5 more minutes.

    Remove from heat and stir in soda and vanilla.

    Pour over popcorn and nuts and gently stir to coat.

    Bake in 300° oven about 20 minutes stirring after the first 10 minutes.

    Spread mixture on a large piece of foil to cool.
