Oat Bran Galette

  • 3 Tablespoons Oat Bran
  • 3 Tablespoons Greek Yogurt (Use Vanilla-flavored For Sweet Or Plain For Savory)
  • 2 whole Egg Whites
  • Cooking Spray

    Whisk the oat bran, yogurt and egg whites in a bowl until you have a nice smooth batter.

    Heat a lightly greased non-stick griddle over medium heat.

    Pour 1/2 cup of batter onto skillet. Cook for 3-5 minutes or until the top starts to dry before flipping. These are more delicate than pancakes, so be gentle when flipping. Cook for another 3-5 minutes on the other side until it's nice and golden brown. Move it from the skillet to a plate and repeat cooking the rest of the batter.

    Cool slightly before serving. Store any extras in a zip top bag in the fridge for up to a week.
