Oat Muffins Challah

Ingredients

  • 2 cups oat flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon apple cider vinegar
  • 2 teaspoons juice water kefir, optional
  • 2 cups water
  • 4 tablespoons coconut oil melted or olive oil
  • oregano
  • onions Sauted, optional
  • 5 eggs

Directions

    Mix flour, salt, baking soda, lemon juice, kefir (optional) and water and let sit in a covered bowl for 6-8 hrs (can be left on the counter).

    After it has finished soaking, add the remaining ingredients and 1/2-1 tsp of each desired spice and mix. It should be like a slightly watery mixture.

    Pour into greased loaf pan or muffin pans (it sticks to papers so only use greased metal or glass). Optional: Sprinkle oregano or basil or any other seasoning on top.

    Bake in oven at 350 for about 1.5 hr for loaf, or 1hr + 10-20 min for muffins until the middle can't be pushed in easily....
