Ingredients

  • 1/2 c. shortening
  • 1 tsp. cinnamon
  • 1 Tbsp. dark molasses
  • 1 egg, unbeaten
  • 3/4 tsp. baking soda
  • 1/2 c. coconut
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1 c. sugar
  • 1 c. sifted flour
  • 1 c. quick oats

Directions

    Combine the first seven ingredients and beat well.

    Sift flour with soda.

    Add to first mixture.

    Add oats and coconut.

    Drop on baking sheet by teaspoonful or tablespoonful.

    Bake at 350° for 10 to 15 minutes.

    These are also good with chocolate chips added.
