- 1/2 c. shortening
- 1 tsp. cinnamon
- 1 Tbsp. dark molasses
- 1 egg, unbeaten
- 3/4 tsp. baking soda
- 1/2 c. coconut
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1 c. sugar
- 1 c. sifted flour
- 1 c. quick oats
Directions

1Combine the first seven ingredients and beat well.

2Sift flour with soda.

3Add to first mixture.

4Add oats and coconut.

5Drop on baking sheet by teaspoonful or tablespoonful.

6Bake at 350° for 10 to 15 minutes.

7These are also good with chocolate chips added.
