  • 1/2 c. (1 stick) butter
  • 2/3 c. granulated sugar
  • 2/3 c. dark corn syrup
  • 2/3 c. rolled oats, uncooked
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • 1 (9-inch) unbaked pie shell
  • 1/2 c. chopped pecans (optional)

Directions

    Melt butter in a heavy saucepan.

    Remove from heat and add sugar, corn syrup and oats; blend well.

    Add beaten eggs and vanilla.

    Pour mixture into unbaked pie shell.

    If desired, top with chopped nuts.

    Bake in a 325° oven for 45 minutes, or until set.

    Yields 1 pie; 6 to 8 servings.
