- 2 large lemons, unpeeled, sliced paper thin
- 2 cups sugar
- 4 large eggs, beaten well
- 1 (8 inch) pastry for double-crust pie
Directions

1Combine lemons and sugar in medium bowl.

2Allow to stand at room temperature at least 2 hours, stirring occasionally.

3Preheat oven to 450F.

4Line pie pan with bottom crust;drain lemon slices and arrange in pastry shell.

5Pour eggs over lemons; cover with remaining pastry.

6Flute edges and cut several small vents in top.

7Bake 15 minutes at 450F; reduce heat to 350F and bake 30 minutes more, until crust is deep golden brown.
