  • 1 1/2 c. sliced okra
  • 1 1/2 c. canned tomatoes
  • 2 Tbsp. chopped red and green peppers
  • 1/3 c. diced, cooked ham or browned ground beef
  • 4 c. cooked rice
  • 1/2 small onion, diced
  • 1/2 tsp. salt
  • dash of pepper

Directions

    Mix all well.

    Put into 2 1/2 to 3-quart buttered casserole. If too dry, add 1/3 cup water or tomato juice.

    Bake, covered, at 350° for 45 minutes.
