Old Fashioned Beef Soup

Ingredients

  • 1 1/2 lb. beef (cheaper cut)
  • 1 good-sized marrow bone
  • 1 medium potato (whole)
  • 1 medium onion, cut into 4 pieces
  • 1 medium carrot (whole)
  • 1 1/2 c. tomatoes
  • 1 Tbsp. salt
  • 6 qt. cold water
  • 2 stalks celery, cut up
  • 2 or 3 sprigs fresh parsley

    Combine all ingredients in a large soup kettle.

    Bring to a boil.

    Then reduce heat to a very slow simmer with just 2 or 3 bubbles coming up.

    Simmer for 3 1/2 hours.

    Add more water if soup simmered down too much.

    Remove meat and bone.

    Strain soup into another kettle.

    Let come to a boil, then add noodles and cook slowly 10 minutes.
