Old Fashioned Coconut Pie

- 1 1/2 c. sugar
- 1/4 c. flour
- 2 c. milk
- 3 egg yolks, slightly beaten
- 1 c. coconut
- 1 Tbsp. margarine
- 1 tsp. vanilla
- 1 (9-inch) pie shell
- 3 egg whites
- 1/4 tsp. cream of tartar
- 3 Tbsp. sugar
- 1 tsp. vanilla
- 1/3 c. coconut
Directions

1In medium saucepan, combine 1 1/2 cups sugar and flour. Gradually stir in milk.

2Cook and stir over medium heat 6 to 8 minutes or until thickened and bubbly.

3Stir 1 cup hot mixture into egg yolks; immediately return to saucepan and hot mixture.

4Cook and stir for 3 to 4 minutes longer.

5Remove from heat and stir in 1 cup coconut, margarine and 1 teaspoon vanilla.

6Pour into pie shell and bake for 30 minutes in oven at 350°.
