Old Fashioned Fruit Cake

  • 3 c. flour
  • 1 1/3 c. sugar
  • 2 tsp. salt
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 c. orange juice
  • 1 c. vegetable oil
  • 4 eggs (2/3 to 1 c.)
  • 2 c. raisins
  • 1/4 c. dark corn syrup
  • 1 (8 oz.) pkg. pitted dates, cut up (1/2 c.)
  • 1 lb. mixed candied fruits (2 c.)
  • 1/2 lb. pecan halves (about 2 c.)

    Measure all ingredients except fruit and nuts into a large mixing bowl.

    Blend 1/2 minute on low speed, scraping bowl occasionally.

    Stir in fruit and nuts.

    Spread mixture evenly into pans.

    Bake in muffin cups at 275° for 40 to 50 minutes.
