Ingredients

  • 1/4 lb. uncooked beef liver
  • 1/8 lb. uncooked beef suet
  • medium size onion
  • 1 egg
  • 8 Tbsp. sweet basil
  • 1 tsp. baking powder
  • 2 tsp. salt
  • black pepper to taste
  • 3 c. sifted plain flour
  • 3/4 c. beef stock or broth from cooked beef roast
  • 1 Tbsp. coriander (ground)

    Grind liver, suet and onion with food chopper.

    Add remaining ingredients.

    Mix with a spoon to a stiff dough.

    Heat remainder of beef stock (about 2 quarts; add water to make this amount, if necessary) to a hard boil.
