Old-Fashioned Potato Soup

- 6 to 8 white potatoes, peeled and sliced
- 3 medium size onions, sliced
- 1 1/2 tsp. salt
- 6 c. milk, scalded
- 2 Tbsp. chopped parsley
- black pepper
Directions

1Put the potatoes and onions in a kettle with the salt and cover with cold water (4 cups).

2Bring to the boiling point. Cover and cook gently for 20 minutes.

3Transfer to a blender and puree the vegetables or simply mash them to a pulp in the water. Add the milk and season to taste with salt and plenty of pepper. Garnish liberally with chopped parsley.
