Old Fashioned Rice Custard

- 1/2 c. uncooked long grain rice
- 4 c. milk
- 1/4 c. butter or margarine
- 3 eggs
- 3/4 c. sugar
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1/2 tsp. ground nutmeg
Directions

1In top of double boiler, combine rice and 2 cups milk.

2Cook over boiling water, stirring occasionally until rice is tender and most of the milk is absorbed, about 45 minutes.

3Stir in butter. Beat eggs, blend in sugar, vanilla, salt and remaining 2 cups milk.

4Stir into the hot rice mixture.

5Pour into a lightly greased 2-quart casserole and top with nutmeg.

6Bake at 350° for 50 minutes or until firm.

7Serves 6 to 8.
