Old-Fashioned Rice Pudding

- 1 qt. milk
- 1/4 tsp. salt
- 1/2 c. sugar
- 1/2 c. raisins
- 1 tsp. vanilla
- 1 c. evaporated milk
- 1/2 c. uncooked long grain rice
- 2 eggs
Directions

1In heavy saucepan, bring milk and salt to simmer.

2Stir in rice and simmer 15 minutes stirring occasionally.

3Add raisins and cook until rice is tender, about 5 minutes.

4In mixing bowl, beat eggs with sugar, vanilla and evaporated milk.

5Add 1 cup cooked rice mixture; stir until blended.

6Return mixture to saucepan and cook over low heat stirring occasionally until slightly thickened, about 15 to 20 minutes.

7Pour into bowl and cool, stirring frequently.

8Serve warm or well chilled with sprinkle of nutmeg.
