- 1 (9-inch) baked pie crust
- 1 1/3 c. sugar
- 1 1/4 c. water
- 2 Tbsp. butter or margarine
- 1/3 c. cornstarch
- 1/2 c. water
- 4 egg yolks (save whites)
- 3 Tbsp. milk
- 1/2 c. lemon juice
- 1 1/2 tsp. lemon peel
- 1/2 c. sugar
- 1/4 tsp. cream of tartar
Directions

1Heat sugar, water and butter or margarine until sugar dissolves.

2Blend cornstarch and cold water.

3Add to hot mixture. Cook slowly until clear, about 8 minutes.

4Beat egg yolks with milk.

5Slowly stir into cornstarch mixture.

6Cook 2 minutes, stirring constantly.

7Remove from heat and add lemon juice and lemon peel.

8Cool. Pour into cooled pie crust.
