Ole' Spoon (Or Batter) Bread

  • 2 1/4 c. sweet milk
  • 2 lb. butter, melted
  • 2/3 c. corn meal
  • 3 eggs, separated

Directions

    Heat milk to scalding; add melted butter and salt, then slowly stir into cornmeal.

    Cook for 1 minute, stirring constantly (do not allow mixture to get too thick).

    Add more milk if necessary. Remove from heat and let cool, then stir in well-beaten egg whites and pour into a hot, greased four cup casserole.

    Bake in a moderate oven (375°) for 35 to 40 minutes.

    Serve hot with plenty of butter.
