- 2 1/4 c. sweet milk
- 2 lb. butter, melted
- 2/3 c. corn meal
- 3 eggs, separated
Directions

1Heat milk to scalding; add melted butter and salt, then slowly stir into cornmeal.

2Cook for 1 minute, stirring constantly (do not allow mixture to get too thick).

3Add more milk if necessary. Remove from heat and let cool, then stir in well-beaten egg whites and pour into a hot, greased four cup casserole.

4Bake in a moderate oven (375°) for 35 to 40 minutes.

5Serve hot with plenty of butter.

6Makes 5 generous servings.
