Ingredients

  • 1 lb. Greek olives, pitted
  • 2 Tbsp. olive oil
  • 4 hard-cooked eggs, mashed
  • pinch of dry mustard
  • 1 clove garlic, crushed in a garlic press
  • pepper to taste
  • egg yolks, hard-cooked and chopped (for garnish)
  • scallions (green part), minced (for garnish)

Directions

    Put olives and olive oil into a blender; puree.

    Blend in remaining ingredients, except yolks and scallions.
  3. 3
    Serve on crackers, or mound in a dish and serve crackers separately. Garnish with egg yolks and scallions.
