- 1 butternut squash, cubed or 6 -8 cups cubed butternut squash
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1 cup sweet white wine (Riesling works well)
Directions

1Preheat the oven to 400F and spray a 9 x 13-inch baking dish with cooking spray.

2In a bowl, toss the butternut squash with the oil and salt.

3Spread on a rimmed baking sheet and bake for 30 minutes.

4Transfer the squash pieces the prepared baking dish.

5Pour in the wine.

6Bake until the squash is tender, 15 to 20 more minutesthe smaller the squash pieces, the shorter the cooking time.
