Ingredients

  • 1 lb. boneless chicken breasts, cut into 1-inch cubes
  • 1/2 c. chopped onion
  • 1/2 tsp. chopped garlic
  • 2 to 3 Tbsp. vegetable oil
  • 1 1/2 c. water
  • 1 (6 oz.) box saffron rice
  • 2 oz. sliced pepperoni
  • 1 c. frozen green peas
  • 1/2 (4 oz.) jar pimento, sliced into 1/2-inch wide strips

Directions

    Saute chicken, onion and garlic in oil for 3 minutes until outside of chicken is not longer pink. Stir in water. Bring to boiling.

    Stir in rice and pepperoni.

    Lower heat. Cover and simmer 20 minutes or until rice is just tender but still firm. Add peas and pimento.

    Cover and cook 5 minutes longer or until peas are heated through. Serves 4.
