One-Step Pork Chop Dinner

- olive oil or vegetable oil
- 4 carrots
- 4 potatoes
- 4 pork chops
- salt and pepper to taste
- dried thyme (optional)
Directions

1Preheat oven to 400°.

2Lightly oil a shallow baking sheet. (The pan should be wide enough to hold all the food in a single layer, with a little space between the ingredients.)

3Wash and, if desired, peel carrots.

4Cut them into 2-inch chunks.

5Wash potatoes, peel (if desired)* and cut into 3-inch chunks.

6Place carrots and potatoes in baking pan and sprinkle with a little oil. Toss to lightly coat the vegetables.

7Make room for the pork chops and add to the pan.

8Sprinkle with salt, pepper and about 1 teaspoon of thyme, if using.

9Bake 40 minutes.

10Serves 4.
