- 2 1/4 c. flour
- 2 c. sugar
- 1/2 tsp. baking soda
- 1 tsp. grated lemon peel
- 1 tsp. vanilla
- 1 c. butter or margarine, softened
- 1 container pineapple or mandarin orange yogurt
- 3 large eggs, at room temperature
Directions

1Combine all ingredients in a large mixing bowl.

2Blend at low speed for 1 minute.

3Beat at medium speed for 3 minutes.

4Pour into greased and floured Bundt or tube pan.

5Bake at 325° for 60 to 70 minutes or until toothpick comes out clean (insert toothpick in the center).

6Cool cake upright in pan for 15 minutes.

7Move from pan and cool completely.

8Serve with favorite ice cream.
