Onion-Coriander Omelette

- 2 large eggs
- 2 tbsp caramelized onion
- 2 bunch coriander
- 1 tbsp butter
- 1 dash salt
Directions

1Scramle eggs in a bowl.

2Add the caramelized onions and finely chopped coriander.

3Blend with the eggs.

4In a non-stick pan, over medium heat, melt the butter.

5Pour the egg mixture into the pan.

6Using a heatproof spatula, as the eggs firm, gently flip one side (imagine you are dividing it into 3) and fold over.

7Do the same with the other side.

8Flip the folded omelette gently to ensure the other side is cooked.

9Ladle into plate.

10Sprinkle the salt.

11Serve with fresh cherry tomatoes.
