Onion & Parmesan Pilaf

- 60 g butter
- 3 onions, sliced
- 2 cloves garlic, crushed
- 2 cups basmati rice
- 5 cups vegetable stock
- 1/2 cup grated parmesan cheese
- 1/2 cup chopped fresh parsley
- 1 1/2 cups shelled peas
Directions

1Melt butter in a large pan, add onion and garlic, stir and cook for 5 mins until soft and golden colour.

2Add rice and stock, bring to the boil, stir.

3Reduce heat to low simmer uncovered for 5 mins or until almost all of the liquid has been absorbed.

4Add peas, stir until combined.

5Cover pan and cook over very low heat for another 10 mins or until rice is tender.

6Stir in parmesan cheese and parsley and serve immediately.
