- 1 envelope onion soup mix
- 2 lb. red potatoes, cut in half (if small reds) or in chunks
- 1/4 c. olive or vegetable oil
Directions

1Preheat oven to 450°.

2In large plastic bag, add all ingredients.

3Close bag and shake until potatoes are evenly coated.

4Empty potatoes into shallow baking or roasting pan; discard bag.

5Bake, stirring occasionally, 40 minutes or until potatoes are tender and golden brown.

6Garnish if desired with chopped parsley.

7Makes about 8 servings.
