- 3 Tbsp. butter
- 1 1/2 lb. yellow onions, thinly sliced
- 6 Tbsp. dry red wine
- 3 Tbsp. dry sherry
- 5 c. beef stock (College Inn)
- 1 tsp. Worcestershire sauce
- 1 tsp. thyme
- 1 bay leaf
- toasted bread
- Gruyere or Swiss cheese
Directions

1Melt butter in heavy frypan, add onions and cook until soft and caramelized.

2Add wine and sherry.

3Bring to boil.

4Add beef stock, Worcestershire, thyme and bay leaf.

5Reduce heat and simmer for 30 minutes.

6Top each serving with toasted bread and grated Gruyere or Swiss cheese.
