Ingredients

  • 3 Tbsp. butter
  • 1 1/2 lb. yellow onions, thinly sliced
  • 6 Tbsp. dry red wine
  • 3 Tbsp. dry sherry
  • 5 c. beef stock (College Inn)
  • 1 tsp. Worcestershire sauce
  • 1 tsp. thyme
  • 1 bay leaf
  • toasted bread
  • Gruyere or Swiss cheese

Directions

    Melt butter in heavy frypan, add onions and cook until soft and caramelized.

    Add wine and sherry.

    Bring to boil.

    Add beef stock, Worcestershire, thyme and bay leaf.

    Reduce heat and simmer for 30 minutes.

    Top each serving with toasted bread and grated Gruyere or Swiss cheese.
