Onion Soup

Ingredients
- 2 Tbsp. vegetable oil
- 2 c. thinly sliced onions
- 4 c. beef bouillon
- 1 small bay leaf
- 1/8 tsp. thyme
- salt and pepper to taste
- 1/2 c. dry white wine
- 4 slices toasted French bread
- 1 c. grated Gruyere cheese
- 1/4 c. grated Parmesan cheese
Directions

1In a heavy 3-quart saucepan, heat oil and saute onions for 2 minutes, stirring constantly.

2Lower heat, cover pan and steam for 10 minutes.

3Then add bouillon, bay leaf, thyme, salt, pepper and wine.

4Simmer for an additional 10 minutes.

5Place soup in 4 deep ovenproof bowls and top each with a slice of toasted bread. Sprinkle with grated cheese and place under broiler until cheese is bubbly.

6Makes 4 servings.
