Ingredients
- 1 Spanish onion, cut in quarters and thinly sliced
- 1 tablespoon butter
- 4 cups beef broth
- 1 tablespoon sugar
- 14 teaspoon pepper
- 18 teaspoon salt
- 18 teaspoon nutmeg
- 1 pinch garlic powder
- 12 cup mozzarella cheese, shredded (or your favourite cheese)
- 2 slices white bread, toasted
Directions

1Melt butter in a pan.

2Add onions and saute on medium low until soft and translucent, about 15 minutes.

3Be careful not to brown too much.

4Add sugar, salt, nutmeg, pepper and garlic powder.

5Cook for about two minutes.

6Add beef broth and allow to simmer for about ten minutes to blend the flavours.

7Add a 1/4 cup of wine or ounce of brandy if desire, stir for about 30 seconds and then ladle into onion soup bowls.

8Place bread on top of the soup, trimming the edges to fit inside the bowl.

9Sprinkle with cheese and place under the broiler.

10Cook until cheese is melted, bubbly and just beginning to brown.

11Serve hot.

12You can also use croutons in place of the toasted bread.
