  • 6 medium onions, thinly sliced
  • 1 stick butter, melted
  • 1 tsp. sugar
  • 3 shakes ground nutmeg
  • 8 rounded tsp. beef stock base
  • 7 c. boiling water
  • 1/2 c. sherry
  • salt
  • large croutons
  • grated Parmesan cheese

Directions

    Saute onions in melted butter with sugar and nutmeg.

    Cook until onions are transparent, but not browned.

    Dissolve beef stock base in boiling water.

    Add onions and simmer for about 20 minutes.

    Add sherry and bring back to a boil.

    Spoon into ovenproof serving dishes; add croutons and Parmesan cheese.

    Place under broiler for 10 minutes.
