- 6 medium onions, thinly sliced
- 1 stick butter, melted
- 1 tsp. sugar
- 3 shakes ground nutmeg
- 8 rounded tsp. beef stock base
- 7 c. boiling water
- 1/2 c. sherry
- salt
- large croutons
- grated Parmesan cheese
Directions

1Saute onions in melted butter with sugar and nutmeg.

2Cook until onions are transparent, but not browned.

3Dissolve beef stock base in boiling water.

4Add onions and simmer for about 20 minutes.

5Add sherry and bring back to a boil.

6Spoon into ovenproof serving dishes; add croutons and Parmesan cheese.

7Place under broiler for 10 minutes.
