- 1/4 c. unsalted butter
- 7 large onions, thinly sliced
- 1 tsp. chopped garlic
- 1/2 c. all-purpose flour
- freshly ground black pepper
- 4 (14 oz. each) cans beef broth
- 2 c. water
- 8 slices French bread
- 2 c. grated Gruyere cheese
Directions

1Melt the butter in a 5-quart Dutch oven.

2Add the onions and cook over medium heat for 10 to 15 minutes, stirring often until well browned.

3Add the garlic and the flour.

4Stir until the flour is no longer white.

5Add the broth, water and pepper.

6Stir well and bring to a boil.
