- 2 large cloves garlic, minced
- 2 Tbsp. olive oil
- 1 loaf Italian bread
- 1 chopped tomato
- 1 small escarole, chopped and steamed
- wine vinegar and capers
- black olives, sliced
- fresh basil
Directions

1Fry eggplant and peppers with garlic in oil 15 minutes.

2Cut bread lengthwise and divide the eggplant mixture, tomato and escarole between each half of bread.
