Orange Banana Bread

  • 1/2 c. (1/4 lb.) butter or margarine
  • 2/3 c. firmly packed brown sugar
  • 2 eggs
  • 1 c. mashed ripe banana
  • 1 tsp. grated orange peel
  • 1 c. whole wheat flour
  • 1 c. all-purpose flour (unsifted)
  • 1/2 tsp. each: salt and soda
  • 1/4 c. orange juice
  • 1/2 c. raisins
  • 3/4 c. granola-type cereal

Directions

    In a large bowl, beat together the butter and brown sugar until creamy; add eggs, one at a time, beating well after each addition.

    Beat in banana and orange peel.

    Stir together whole wheat flour, all-purpose flour, salt and soda.

    Mix into the butter mixture with the orange juice; stir in raisins and granola. Spread batter in a well-greased 9 x 5-inch loaf pan.

    Bake in a 350° oven for 1 hour or until a wooden pick inserted in center comes out clean.

    Invert bread onto a wire rack to cool before slicing. Makes 1 loaf.
