Orange Cashew Rice

- 3 Tbsp. butter or oil
- 2/3 c. diced celery
- 2 Tbsp. chopped onion
- 1 1/2 c. water
- 2 Tbsp. grated orange rind
- 1/4 tsp. salt
- 1 c. raw brown rice
- 1 c. lightly toasted almonds or cashews
- 1 small can mandarin oranges, drained
Directions

1Saute celery and onion in butter.

2Add water, orange juice and rind and salt.

3Bring mixture to a boil and add rice.
-
4Cover and simmer for 45 minutes or until liquid is absorbed.

5Stir in cashews and orange segments.
-
6If fresh fruit is preferred, pineapple or nectarines are very good.

7Serves 6.
