- 3/4 c. milk
- 1/4 c. oil
- 1 c. cornmeal
- 1/4 c. honey
- 1/2 tsp. salt
- 1 egg
- 1 1/2 tsp. orange peel, freshly grated
- 1 c. whole wheat flour
- 1 Tbsp. baking powder
- 1/4 c. sugar (for top; optional)
Directions

1Beat together the milk, egg, oil, honey and 1 teaspoon orange peel.

2Add to combined cornmeal, flour, baking powder and salt, mixing just until dry ingredients are moistened.* Fill 12 greased or paper lined medium size muffin cups 2/3 full.** Sprinkle combined remaining peel and sugar evenly over batter.

3Bake at 425° for about 15 minutes.
