Orange Date Salad

Ingredients

  • 2 whole Navel Oranges
  • 2 teaspoons Honey
  • 8 whole Dates, Chopped
  • 1/4 cups Pine Nuts Or Almonds, Toasted
  • 8 leaves Mint, Chopped
  • 1/4 teaspoons Cinnamon
  • 1/4 cups Shredded Coconut (optional)

Directions

    Peel and separate sections of oranges. Remove white pith from sections. If any slices are too wide, slice them in half lengthwise.

    Place orange sections in a bowl, and pour honey on top. Stir gently to blend well. Place in the fridge for about 20 minutes to chill.

    Chop the dates. Toast pine nuts (or almonds) in a nonstick pan for 2 minutes. Chop the mint leaves.

    Take the bowl with the oranges out of the fridge, and add all of the remaining ingredients. Sprinkle cinnamon over it, then top with coconut, if desired!
