  • 3 oranges, divided
  • 3 kiwi fruit, peeled and diced
  • 1/3 c. raisins
  • 1/4 c. chopped red onion
  • 1 to 2 Tbsp. lemon juice
  • 2 tsp. chopped fresh mint
  • salt to taste

Directions

    Peel and section 2 oranges; halve orange sections.

    Squeeze juice from remaining orange into medium sized bowl; add orange sections and remaining ingredients.

    Cover and refrigerate overnight or up to 2 days.

    Serve with grilled chicken, duck, pork, lamb or fish.
