  • 1 medium size orange
  • 1 c. raisins or dates
  • 2 Tbsp. melted shortening
  • 1 tsp. vanilla
  • 1 egg, beaten
  • 2 c. flour
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1 c. sugar
  • 1/2 c. chopped nuts

Directions

    Squeeze juice from orange in 1 cup measuring cup.

    Add boiling water to make 1 cup.

    Force orange rind and raisins through food chopper, use coarse blade.

    Add diluted orange juice; stir in shortening, vanilla and egg.

    Add flour, sifted with salt, baking powder, soda and sugar.

    Beat well; stir in nuts.

    Bake in greased, 1 pound loaf pan in a 350° oven for about 1 hour.

    Cool in pan before slicing.
