  • 1 c. sugar
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. salt
  • 1 Tbsp. grated orange rind
  • 2 eggs
  • 1 1/2 c. canned pumpkin
  • 1 2/3 c. (large can) undiluted evaporated milk
  • 9-inch unbaked pie shell

Directions

    Combine sugar, spices, salt and orange rind.

    Stir in eggs, pumpkin and evaporated milk.

    Pour into pie shell.

    Bake in preheated 425° oven for 15 minutes; reduce oven temperature to 350° and continue to bake for 40 minutes longer.

    Cool. To serve, top with whipped topping and garnish with orange half slices, if desired.
