- 1 to 2 Tbsp. margarine
- 1 c. uncooked long grain white rice
- 3/4 c. chopped celery
- 1 Tbsp. chopped onion
- 2 tsp. grated orange rind
- 2 c. unsweetened orange juice
- 1/2 tsp. salt
Directions

1Melt margarine in skillet to coat bottom.

2Place over medium heat until hot.

3Add rice, celery and onion.

4Cook, stirring occasionally, until rice is lightly browned.

5Add remaining ingredients and bring to a boil.

6Pour mixture into a 1 1/2-quart casserole.

7Cover and bake at 350° for 25 to 30 minutes or until done.
