Orange Yogurt Cake

  • 2 None large eggs
  • 165 g firmly packed brown sugar
  • 2 tsp finely grated orange rind
  • 90 g ground almonds
  • 50 g wholemeal self-raising flour
  • 95 g plain yogurt
  • 60 g light cream cheese, softened
  • 2 tbsp icing sugar
  • 1 tbsp orange juice
  • None None sliced orange rind, for decorating

Directions

    Preheat oven to 160°C/140°C fan/gas 3. Grease a closed 20cm round springform tin and line base and side with baking paper.

    Beat eggs, sugar and rind in a small bowl with an electric mixer until light and fluffy. Stir in ground almonds, flour and yogurt.

    Spoon mixture into tin and bake for about 45 mins. Stand in tin for 5 mins before turning, top-side up, onto a wire rack to cool.

    Meanwhile, make icing by whisking together cream cheese, icing sugar and orange juice in a small bowl until smooth. Spread cake with icing; top with thinly sliced orange rind.
