  • 1 cup butter or margarine
  • 1 tbsp Orange peel
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 2 cup brown sugar
  • 4 eggs
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 1/2 cup orange juice
  • 2 cup zucchini
  • 1 1/2 cup powdered sugar

    Cream butter and sugars, add Orange peel, spices and eggs.

    Sift flour, salt, baking powder.

    Alternate flour mixture and orange juice mix well.

    Add to creamed mixture.

    Add zucchini.

    Pour into greased and floured loaf pan or cake pan.

    Cool in pan, then make Glaze, 1 1/2 cups powered sugar, 1/2 teaspoon vanilla, 2-3 tablespoons milk, 1 tablespoon soften butter.
