- 2 Tbsp. olive oil
- 1 medium onion, diced
- 2 yellow peppers, sliced in strips
- 2 red peppers, sliced in strips
- 1 Tbsp. basil
- 2 Tbsp. garlic
- 1 Tbsp. tarragon
- 1 lb. raw peeled shrimp
- 1 can Mexican stewed tomatoes
- 1/2 c. Feta cheese
- orzo
Directions

1Saute onion, peppers and spices in olive oil approximately 5 to 10 minutes until tender.

2Add shrimp and continue to cook 3 to 5 minutes, until shrimp are cooked.

3Add 1 can Mexican tomatoes. Add Feta cheese; warm through.

4In a separate pan, cook orzo pasta as directed; drain.

5Serve shrimp mixture over orzo pasta.
