  • 1 ounce baker's yeast fresh
  • 4 cups flour
  • 1 cup whole milk
  • 2/3 cup caster sugar
  • 1/2 cup butter soft
  • 2 egg yolks
  • 1 whole egg
  • 2 tablespoons raisins
  • 1 tablespoon orange blossom water
  • 1 egg for gilding plus 1 tablespoon of milk

    In a small bowl mix the yeast with a coffeespoon of sugar, 1 tablespoon flour and 3 tablespoons of milk (taken in the above mentioned measures).

    Allow the mixture to double in volume.

    In the mixer bowl pour the eggs (2 yolks and 1 whole egg), sugar, orange blossom water, butter and then mix.

    Add the mixture with the yeast, flour, milk and raisins. Knead for about 7-10 minutes to get a smooth paste.

    Cover the bowl with a dry cloth and let the dough double in volume.

    On a lightly floured work surface , place the dough, degas it by pressing on it with your fist.

    Divide it into 12 equal portions, make balls.

    Place the balls on a baking sheet covered with parchment paper.

    With the help of a scissors cut the dough in 3 large notches .

    Brown them with the brush with the remaining egg. Dilute it with a tablespoon of milk. Preheat the oven to 170°C and let the buns rise while preheat your oven.
