Oven Baked Eggplant

- 1 large eggplant, washed and sliced in rounds
- 2 eggs
- 1/4 c. mayonnaise
- 1 1/2 c. Italian bread crumbs
Directions

1Peel potatoes if the skin is tough, otherwise just scrub and rinse them.

2Cut potatoes into thin slices but not all the way through.

3Use a handle of a spoon to prevent knife from cutting all the way.

4Put potatoes in a baking dish.

5Fan them slightly. Sprinkle with salt and drizzle with butter.

6Sprinkle with herbs. Bake potatoes at 425° for about 50 minutes.

7Remove from oven. Sprinkle with cheeses.

8Bake potatoes for another 10 to 15 minutes until lightly browned.

9Cheeses are melted and potatoes are soft inside. Check with fork.
