Oven-Baked Hake With Vegetables And Lovage

- 1 tomato, cut into cubes
- 1 clove garlic, chopped
- Handful of lovage and parsley leaves, chopped
- 1 tbs olive oil
- Sea salt
- 2 hakes, cleaned
Directions

1In a bowl mix zucchini, olives and tomato. Sprinkle with garlic, lovage and parsley. Season with salt if needed (olives are already salty!).

2Pour olive oil onto vegetables, mix. Season the fish, from outside and inside, with salt.

3Fill the fish cavity with parsley, lovage and garlic. Lightly coat the fish with olive oil.

4Line a baking pan with Al foil long enough to completely cover the fish and vegetables.

5Place vegetables in the pan, lay the hake on top and cover with foil. Bake in oven for 15 minutes at 200 C. Remove the foil and continue to bake for additional 15 minutes.

6Serve with cold potato salad.
