Oven Beef Stew

  • 2 Tbsp. flour
  • 1 1/2 tsp. salt
  • 1 1/2 lb. stewing beef, cut in 1-inch cubes
  • 2 Tbsp. shortening
  • 2 (10 3/4 oz.) cans tomato soup
  • 1 1/2 c. chopped onion
  • 1/2 tsp. dried basil
  • 4 medium potatoes, pared and cubed
  • 4 medium carrots, cut in 1-inch pieces
  • 1/2 c. dry red wine
  • 1 c. frozen peas

Directions

    Combine flour, salt and dash of pepper; coat meat cubes in seasoned flour.

    Brown in hot shortening in Dutch oven.

    Add soup, 1 cup of water, onion and basil.

    Cover and bake in a 375° oven for 1 hour.

    Add potatoes, carrots and wine.

    Cover and bake 1 hour longer.

    Add peas and let sit, covered, about 15 minutes. Serve with buttered noodles.
