- catfish fillets
- 1 pkg. cornbread mix
- low-fat mayonnaise
- onion powder
- paprika
Directions

1Line cookie sheet with foil and spray with Pam (or other cooking spray).

2Preheat broiler with rack 4 inches from heat.

3On waxed paper, cover fillets on both sides with mayonnaise (1 tablespoon per 2 fillets).

4Roll in dry cornbread mix, covering well.

5Liberally sprinkle with onion powder and dust with paprika. Spray tops of fillets with Pam.

6Broil until fish flakes easily, 10 to 15 minutes.
