  • 1 (3 lb.) fryer, cut up
  • 1/2 c. olive oil
  • 1 c. cornflake crumbs
  • 1/2 c. Parmesan cheese
  • 1/2 c. Romano cheese
  • 1/2 c. parsley
  • garlic salt
  • pepper to taste

Directions

    Wash and dry chicken.

    Marinate in oil for 1 to 2 hours, turning often.

    Combine other ingredients in a large shallow dish. Roll chicken in mixture and place in greased, shallow baking pan. Bake at 350° for about 1 hour until crisp and tender.
