- 1 peeled eggplant
- 1 egg
- 1 c. dry bread crumbs
- 1/8 tsp. pepper and cayenne
- 1 1/2 tsp. Parmesan
- 1/4 tsp. garlic powder
- 1/4 tsp. dried basil
- 1 Tbsp. Crisco
Directions

1Heat oven to 375°.

2Slice eggplant in 1/2-inch slices.

3Beat egg.

4In bowl (flat bottom), combine crumbs and seasonings.

5Dip slices in egg, then in crumb mixture.

6Place on preheated cookie sheet that has been greased with 1 tablespoon Crisco.

7Continue coating slices and adding to hot cookie sheet.

8Bake 15 minutes, turn over and bake 15 more minutes.
